Immersive and tasting learning in businesses, experiences, itineraries, routes, and tours
The Worklab complements classroom learning with sensory and immersive tours to experience the gastronomic history and culture of San Pedro and San Andrés Cholula through ambiance and tasting of appetizers, menus, culinary traditions, local ingredients with ancestral criollo corn planting processes, and desserts such as “muégano cholulteca” for local celebrations, ancestral beverages such as mezcal and “cacao foam”, served on contemporary pottery decorated with pre-Hispanic ceramic designs or UNESCO World Heritage Talavera pottery. Visit the local market to discover the ingredients of Mole Poblano, the most representative mestizo dish of Puebla and Mexico, then learn its preparation process. The tasting menu includes one artisan mezcal tasting per participant. As a grand finale comes the beer tour. Participants may optionally evaluate unique businesses or those recommended by the Michelin Guide.
II. In-person WorkLab — 15 field hours
Friday 18 (9:00–10:30 PM), Saturday 19 (2:30–5:30 PM and 9:00–10:30 PM), Sunday 20 (9:00 AM–7:00 PM). In-person participants only.
Field itinerary
September 18
- Welcome and integration: cocktail (2) and appetizers (5) for networking and integration.
September 19
- Visit to San Gabriel Arcángel Convent and Royal Chapel.
- Meal with criollo corn exhibition (3 courses, flavored water included).
- Toltecalli visit with pre-Hispanic pottery designs.
- Plaza de la Concordia: cacao foam and muégano cholulteca tasting.
- Vive y Viaja por Cholula immersive dinner with view of Our Lady of Remedies Sanctuary.
September 20
- Mole Poblano experience at Cosme del Razo Market.
- Immersive mole workshop with 3-course tasting menu.
- Panoramic and beer tour of 3 craft breweries.
- Free evening for optional mystery guest evaluation.
What the WorkLab includes
Includes: Integration cocktail and appetizers (18), criollo corn meal, cacao foam, muégano, immersive dinner (19). Mole experience with a 3-course menu, one artisan mezcal tasting per participant, flavored water, and beer tour (20). Tourism Secretariat certified guide.
Not included: lodging, additional alcoholic beverages, tips, and VAT.
