The WorkLab complements classroom learning with sensory and immersive tours to experience the gastronomic history and culture of San Pedro and San Andrés Cholula through ambiance and tasting of appetizers, menus, culinary traditions, local ingredients with ancestral criollo corn planting processes, and desserts such as cholulteca “muégano” for local celebrations, ancestral beverages such as mezcal and “cacao foam”, served on contemporary pottery decorated with pre-Hispanic ceramic designs or UNESCO World Heritage Talavera pottery. Visit the local market to discover the ingredients of Mole Poblano, the most representative mestizo dish of Puebla and Mexico, then learn its preparation process and taste it with artisan mezcal. As a grand finale, the beer tour. Participants may optionally evaluate unique businesses or those recommended by the Michelin Guide.
